handful fresh or frozen blackberries, plus extra to garnish (optional)

2-3 sprigs thyme, plus extra to garnish

squeeze of lemon juice

60ml Bombay Sapphire Gin

60ml Aperol
-
30ml bianco vermouth

soda water, to top

Like summer in a glass, this beautifully refreshing drink’s bitter accents are offset by berry sweetness and a touch of thyme. Serves 1

Muddle the blackberries and thyme together in the bottom of a cocktail shaker. Fill with ice, then add the remaining ingredients, except the soda water. Shake vigorously, then fine strain into a large wine glass filled with ice.

Top with soda water, to taste. Pop a sprig of thyme in the glass. Garnish with blackberries threaded onto a cocktail skewer, if desired.
